Ingredients

1.5 kg chicken thighs, boneless
1 cup pineapple juice, unsweetened
½ cup Tuimato sauce
½ cup soy sauce
½ cup brown sugar
⅓ cup chicken stock
2 garlic cloves, minced
1 tsp fresh ginger, minced
½ tsp SIDS CRAZY LEMON

Directions

Cut off any excess fat from the chicken. Place it in a large bowl.
In a separate dish, combine SIDS CRAZY LEMON, chicken stock and all the remaining ingredients. Whisk to combine.
Reserve ¼ cup of the marinade to use for basting later. Pour the remaining sauce over the chicken, let it marinate for at least 5 hours or leave overnight.
Once the chicken is fully marinated, preheat the grill to medium high. Place chicken on to the grill. Save the raw marinade to make into a dipping sauce by reducing down over medium heat.
Grill chicken on each side for about 8 minutes, baste occasionally with the reserved marinade. Chicken is fully cooked when internal temperature reaches 75°C. Serve right away.
