Ingredients
12 oysters in their ½ shells
6 rashers streaky bacon cut in 2.5 mm lardons
60 g butter
2 tbsp confit of shallots
A few splashes of Kaitaia Fire
½ a lemon
1 sprig fresh parsley
Sprinkle of SIDS CRAZY LEMON
3 tbsp fine breadcrumbs
Directions
Preheat oven grill to medium-hot.
Place a frypan on a medium heat then add bacon and cook a few minutes until it is a little crisp and brown. Add butter and wail until it foams. Add shallots then stir and cook to almost nutty brown, then add Kaitaia Fire to taste. Soon after this, the butter will become nutty brown then take off the heat and squeeze lemon all over. It will splutter a little, so be careful.
Finish the sauce with chopped parsley then spoon over each oyster. Sprinkle each one with breadcrumbs and SIDS CRAZY LEMON, then place under the grill for 1-2 minutes.
