Ingredients
MARINADE:--
5 whole garlic cloves
2 tbsp coriander roots
1 tsp white peppercorns
2 tbsp kecap manis
2 tbsp oyster sauce
2 tbsp fish sauce
1 tbsp raw sugar
1 cup coconut milk
1 tbsp cornflour
NAHM JIM JAEW SAUCE:--
3 tbsp fish sauce
1 tsp tamarind paste
1 tbsp raw sugar
Juice of 1 lime
1 shallot, fine diced
1 spring onion, fine diced
2 tsp fine chopped coriander root
1 tsp chilli flakes
½ tsp SIDS SMOKEY BBQ RUB
Soaked skewers
500 g pork fillet
Directions
Grind together garlic, 2 tbsp coriander root and white pepper then spoon into a bowl. Add kecap manis, oyster sauce, fish sauce, sugar, coconut milk and cornflour then mix well together.
Slice pork into cubes for the kebabs then add to the marinade. Cover then refrigerate overnight.
Mix together SIDS SMOKEY BBQ RUB and all the Nahm Jim Jaew sauce ingredients then set aside.
Thread pork onto the skewers and grill on the BBQ to desired doneness, basting often with the marinade.
Serve with a ramekin of Nahm Jim Jaew sauce for dipping.
