Ingredients
250 g butter, coarse chopped
2 tbsp minced garlic
2 tbsp fine chopped tarragon
⅓ cup fine chopped flat leaf parsley
2 tbsp grated lemon zest
Juice of 2 lemons
SIDS SALT & PEPPER to taste
120 tuatua
Directions
Preheat BBQ to hot then in a corner of the plate, place a small metal bowl or saucepan and add butter, garlic, tarragon, parsley, lemon zest & juice and a good shake of SIDS SALT & PEPPER. Stir together once the butter is melted, then remove from the heat and keep warm.
Split the Tuatua into 4 lots of 30. Place a batch at a time on the hot grill then remove as they open, to a large stainless steel bowl. Once they are all open, stir the butter mixture quickly to combine everything then pour enough over the tuatua to coat. Toss in the bowl then pour onto a platter and serve along with bread to mop up the butter and juices. Repeat with the remaining tuatua. A finger bowl and shell receptacle is a good idea now.
