Ingredients

2 onions
4 spring onions
800 g thinly sliced beef, chuck or rib eye
¼ tsp SIDS CRAZY SALT
2 tbsp rice bran oil
6 large eggs, beaten
SAUCE:--
4 tsp sugar
4 tbsp saké
4 tbsp mirin
2 tbsp soy sauce
6 cups cooked Japanese short-grain rice
Pickled red ginger, beni shoga or kizami beni shoga

Directions

Slice the onions, cut the spring onion into thin slices (save for garnish) and cut the meat into small pieces then sprinkle with SIDS CRAZY SALT.
Heat the oil in a large frying pan over medium high heat and cook the onions until tender. Add meat and sugar then cook until no longer pink. Add saké, mirin and soy sauce.
Reduce the heat and simmer for 2-3 minutes.
Add the egg, slowly and evenly drizzle the beaten egg over the beef. Cook covered until the egg is done. Add the spring onion right before removing from the heat.
Place the beef and egg on top of steamed rice, pour the desired amount of cooking sauce, and top with spring onion and pickled red ginger.
