Ingredients

1 tbsp butter
1 tbsp lemon juice
SIDS SALT & PEPPER
125 g Gruyère cheese, grated
1 tbsp fresh parsley, chopped
1 tbsp thyme, chopped
5 tsp whole seed mustard
200 g shaved ham, rough chopped
5 sheets flaky pastry, defrosted
1 egg yolk, lightly beaten
250 g mushrooms, fine chopped
½ tsp SIDS SMOKEY BBQ RUB

Directions

Preheat the oven to 200°C.
Line a baking tray with a Teflon baking sheet or baking paper. Melt the butter in a frying pan. Add the mushrooms and lemon juice. Cook gently for about 5 minutes, until the mushrooms are soft. Season with SIDS SALT & PEPPER and set aside to cool.
Place SIDS SMOKEY BBQ RUB, cheese, ham, parsley, thyme and mushrooms in a bowl. Mix until combined.
Spread 1 teaspoon of whole seed mustard on each sheet of pastry. Using a 7 cm round pastry cutter or similar, cut the pastry into 9 round shapes per sheet.
Place a teaspoonful of the ham mixture into the middle of each pastry round. Gather up the edges and pinch together.
Place on the baking tray and brush with the egg yolk. Bake for about 10 minutes until golden.
