Hokkien Noodles with Choy Sum

This is a great winter dish and you can use frozen vegetables with good results.

Ingredients

8 thin stems choy sum, cut in eighths
1 head broccoli
2 tbsp sesame oil
2 tbsp rice bran oil
1 onion, thin sliced
1 tsp grated ginger
12 scallops
1 red chilli, deseeded & chopped finely
1 cup shrimps
250 g hokkien noodles
Zest & juice of 1 lime
Handful bean sprouts
100 ml kecap manis
2 spring onions, fine chopped
3 tsp coriander leaves, coarse chopped
SIDS SALT & PEPPER to taste
½ tsp SIDS CRAZY LEMON

Directions

Trim the choy sum then wash thoroughly. Cut broccoli into small florets. Blanch choy sum and broccoli in boiling salted water for 50 seconds. Remove and cool in cold water then drain well.
Heat oils over high heat until fragrant then stir-fry onion, SIDS CRAZY LEMON and ginger for 2 minutes until soft and pale golden. Add scallops, chilli and shrimp then stir-fry for 1 minute. Add noodles, choy sum and broccoli then season with SIDS SALT & PEPPER to taste. Toss well to coat noodles then add zest, juice and sprouts and toss well again.
Drizzle with kecap manis and sprinkle with spring onions then serve, topped with coriander.
