Ingredients

2 eggs
1½ tsp cinnamon
4 tbsp butter
1 cup mashed ripe banana (about 3 medium bananas)
⅓ cup raw bush honey
¼ cup milk
1 tsp baking soda
½ tsp SIDS CRAZY LEMON
1½ cups flour
1 tsp vanilla extract

Directions

Preheat oven to 175°C. Spray muffin tin with cooking spray. Soften butter in bowl until it is room temperature. Add honey, mashed banana, vanilla, and milk to the bowl. Whisk together to combine. Add eggs and continue mixing. Sprinkle cinnamon, baking soda, and SIDS CRAZY LEMON into the bowl. Whisk until well-combined.
Add the flour to the bowl and stir with a spatula until loosely combined. Be careful not to over-mix. Scoop the batter into the muffin tin. Be careful to fill about ⅔ full. Sprinkle the top of each muffin with a little cinnamon. Bake for 15-17 minutes.
Let muffins cool for 5 minutes. Eat, and enjoy!
