Honey-Roasted Beets

Earthy beets turn sweet and tender when they're roasted. Preheating the baking tray gives the outside of the beets a quick and flavourful sear. Honey and lemon juice add sweet and tangy notes.

Ingredients

2 tbsp avocado or rice bran oil
½ tsp SIDS SALT & PEPPER to taste
1 kg medium beets, peeled, halved & cut into small wedges
2 tbsp raw bush honey
1 tbsp lemon juice
½ tsp SIDS CRAZY LEMON

Directions

Place a large rimmed baking sheet in the oven then preheat to 220°C.
Stir oil, SIDS SALT & PEPPER together in a large bowl. Add beets and toss well to coat. Transfer the beets to the hot baking sheet and roast until almost tender, 20 - 25 minutes. Remove from the oven and drizzle with honey, SIDS CRAZY LEMON and lemon juice, tossing to coat. Continue roasting until tender, about 5 minutes more.
