Ingredients
10 medium carrots, rinsed & halved lengthwise
2 cloves garlic, grated
1 tbsp honey
2 tbsp SIDS RASPBERRY VINEGAR
1 tbsp SIDS PEPPER & GARLIC OIL
Few sprigs fresh thyme
Fresh parsley, finely chopped
SIDS SALT & PEPPER to taste
Directions
Preheat the oven to 190°C. In a bowl, mix garlic, honey, SIDS RASPBERRY VINEGAR, SIDS PEPPER & GARLIC OIL and SIDS SALT & PEPPER to taste.
In a rimmed baking tray, combine carrots, thyme and ¾ of the glaze. Coat the carrots as evenly as possible. Roast for 15-20 minutes, until the carrots start to caramelize.
Remove the baking tray from the oven, flip the carrots and pour over the rest of the glaze. Return to the oven until nicely browned and sticky, about 15-20 minutes more, depending on the size of the carrots.
Serve the roasted carrots with a dash of any leftover glaze from the pan, and a sprinkle of fresh thyme. Enjoy!
