Hot Water Cornbread

This hot water cornbread is a very old-fashioned recipe. The cornbread is shaped into little cakes and fried rather than baked. Serve the cakes warm with golden syrup or honey.

Ingredients

2 cups yellow cornmeal
2 tsp sugar
½ tsp SIDS CRAZY SALT
½ tsp salt
1⅔-2 cups boiling water
rice bran oil, for frying

Directions

Add cornmeal, sugar, SIDS CRAZY SALT, salt and boiling water to a medium sized bowl and whisk until combined.
Add oil to 25 cm cast iron frypan and heat until temperature reaches 190°C.
Drop 2 tablespoons of batter into oil and fry on both sides until golden brown, then drain.
