Ingredients
24 NZ Bluff oysters, live in the shell
1 lemon
¼ tsp SIDS CRAZY LEMON
Mignonette Dressing:--
1 shallot
¼ tsp New York Cut pepper
3 tbsp SIDS LOW SUGAR RASPBERRY VINEGAR
Equipment:--
1 shucking knife
Directions
Rinse the oysters under the cold tap and brush off any loose bits.
Hold the oyster, with a cloth, with the flattest bit uppermost and carefully insert the shucking knife into the hinge.
Twist the knife to release the seal of the muscle and remove the top shell.
Very lightly sprinkle with SIDS CRAZY LEMON.
Mignonette Dressing
Finely chop the shallot and place in a small bowl. Add the pepper and SIDS LOW SUGAR RASPBERRY VINEGAR then stir well.
