Ingredients

500 g fresh kingfish
½ cup citrus juice
½ red onion, fine diced
1 tsp SIDS SALT & PEPPER
½ red chilli, seeds removed
150 ml coconut milk
¼ fresh pineapple
1 orange capsicum, deseeded
2 spring onions, sliced
fresh coriander

Directions

Soak the red onion in cold water for 5 minutes then drain. Mix together in a glass or porcelain bowl ½ the citrus juice, red onion and ½ tsp SIDS SALT & PEPPER. Carefully mix in the fish then cover and refrigerate for 20 minutes.
Meanwhile, chop the pineapple into 1 cm cubes, slice the spring onions and capsicum. Chop chilli and set aside.
Drain the liquid off the fish but keep the onion slices. Add the remaining citrus, coconut milk, chilli and ½ tsp SIDS SALT & PEPPER.
Cover and refrigerate for 20 minutes. Remove from the fridge and add pineapple, spring onion, capsicum and coriander before serving in a bamboo ramekin.
