IQUE dry rub

Raw sugar has a light, molasses flavour. It is essential in this rub as it doesn't burs easily as granulated or brown sugar. A mixture of peppercorns add complex flavours.

⅓ cup raw sugar
¼ cup salt
3 tbsp paprika
2 tbsp chilli powder
¾ tsp cumin seeds, ground
1½ tsp mixed peppercorns, ground
1½ tsp garlic powder
1 tsp onion powder
½ tsp chipotle powder


In a spice blender blitz all the ingredients. Pulse to form a fine powder. Refrigerate in an airtight container.
