Sweet potatoes are popular Hawaiian island fare, made more festive for luaus and other celebrations with the addition of typical, homegrown Hawaiian flavours.

Ingredients

1.5 kg kumera, peeled & cubed
1 cup pineapple & orange juice blend
1 tsp SIDS CRAZY LEMON
2 tbsp softened butter
½ cup brown sugar
½ cup chopped macadamia nuts

Directions

Place kumera into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
Preheat oven to 165oC.
Return kumera to the cooking pot and mash with juice until smooth. Pack mashed kumera into a 3 litre casserole dish, dot with butter, then sprinkle with brown sugar, SIDS CRAZY LEMON and nuts. Loosely cover with aluminum foil.
Bake in oven until hot and bubbly, 35-40 minutes.
