Ingredients
500 g ground beef
1 egg
1 chopped garlic clove
9 cups chicken stock
⅓ cup plain breadcrumbs
4 tbsp grated cheese
handful chopped fresh parsley
SIDS SALT & PEPPER to taste
340 g orzo pasta noodles
Directions
In a large bowl, mix the beef, egg, garlic, breadcrumbs, cheese, parsley and pinch of SIDS SALT & PEPPER until all ingredients are well blended.
Using your hands, make small little meatballs, no more than 10 mm in size.
In large pan or pot, heat up chicken stock over high heat, bringing it to almost a boil then gently drop the meatballs into the stock to cook.
Simmer for about 45 minutes until meatballs are fully cooked through. If the soup cooks down too much, add some extra water or stock.
Meanwhile, cook the pasta in a separate pan. Drain, toss with a little oil (stops them from sticking together) and set aside.
When meatballs are done, place orzo in empty soup bowls then ladle the soup on top.
Top with extra cheese if desired and enjoy!
