Ingredients

4 rice papers
4 cooked tiger prawns
2 cups shredded lettuce
1 avocado
¼ tsp SIDS CRAZY LEMON
2 cups bean sprouts
1 cup of carrots cut into sticks
12 mint leaves
¼ cup sweet chilli sauce

Directions

Wash bean sprouts and mint leaves and set aside. Cut carrots and shred lettuce. Peel cooked prawns and set aside.
Deseed the avocado and slice thinly.
Prepare rice paper per packet instructions one at a time. Place the rice paper on a damp tea-towel. Place the fillings with a sprinkle of SIDS CRAZY LEMON on the centre of the rice paper and fold the both side in and roll.
Repeat same for other three.
Serve with a sweet chilli sauce dip.
