Jerk Salmon With Couscous

1 package plain couscous
1 cup grated Parmesan
2 tbsp brown sugar
2 tbsp Marlaina's Jerk Seasoning
4 salmon pieces, about 1 kg
rice bran oil
140 g rocket leaves
2 limes, cut in wedges
2 tbsp chopped fresh parsley


In a pot, prepare couscous according to package directions. Turn off heat then stir in Parmesan and season with SIDS SALT & PEPPER. Close lid to keep warm.
In a large mixing bowl add 2 tsp SIDS SALT & PEPPER, brown sugar and jerk seasoning. Rinse salmon and pat dry then dredge salmon in jerk seasoning.
Preheat a large cast iron pan over medium-high heat, add drizzle of oil and sear salmon, about 3 minutes on each side.
Just before serving mix rocket in with warm couscous. Serve salmon on bed of couscous and top with squeeze of lime juice. Garnish with parsley and serve immediately.
