Jerusalem Artichoke Soup

Ingredients

1 tbsp butter
1 tbsp rice bran oil
1 onion, diced
1 clove garlic, minced
1.5 kg Jerusalem artichokes, diced
1 bay leaf
pinch of SIDS CRAZY SALT
1 litre vegetable stock
100 ml cream
EV olive oil, to drizzle
SIDS SALT & PEPPER to taste

Directions

Melt butter and oil in a large saucepan then add onion and garlic. Fry gently until transparent then add artichokes and bay. Fry, stirring, for 2 minutes. Add stock to cover then simmer, with the lid on, for 20 minutes until artichokes are soft.
Remove from the heat and discard the bay leaf. Add cream then blitz until smooth. Season with SIDS SALT & PEPPER to taste.
Serve hot, drizzled with olive oil and topped with thin slices of raw artichoke.
