A keto version of the classic sausage, egg breakfast sandwich with a maple flavoured chaffle. You can prep keto breakfast ahead of time and eat it on the go.

Ingredients

MAPLE CHAFFLE:--
1 egg
2 tbsp almond flour or 2 tsp coconut flour
½ tsp baking powder
½ cup shredded mozzarella cheese
1 tbsp maple syrup
Sandwich Components:--
1 tbsp butter
1 sausage patty, cooked
1 fried egg, firm yolk

Directions

Preheat waffle maker. Mix all the maple chaffle ingredients in a small bowl.
Pour ½ the batter into the waffle maker and cook until set - about 3-5 minutes.
Remove the maple waffle once finished cooking. Repeat with remaining batter.
Spread butter on one side of each maple chaffle. Top with fried egg and heated sausage patty.
