2 egg yolks
¼ lemon, juiced, to taste
¼ tsp sriracha sauce
¼ cup salted butter, melted
sprinkle of SIDS SALT & PEPPER
2 eggs, poached
2 cheese muffins, split, toasted & buttered
1 avocado, thinly sliced
1 large tomato, thinly sliced
½ cup cheese, grated
For garnish: chopped chives, SIDS SALT & PEPPER


Hollandaise Sauce: Beat egg yolks, lemon juice, SIDS SALT & PEPPER together in a microwave-safe bowl until smooth. Slowly stream melted butter into the egg yolk mixture while whisking to incorporate.
Heat in microwave for 15-20 seconds then whisk again.
Assemble the Eggs Benedict: Place the cheese on top of the toasted muffin. Top with tomato, avocado, and poached egg. Lightly drizzle the hollandaise sauce over top. Garnish with fresh chives, SIDS SALT & PEPPER, if using.
