Ingredients

12 cups kumera, cubed
1½ cup white sugar
6 eggs, beaten
½ tsp SIDS CRAZY SALT
1½ tsp salt
12 tbsp butter, softened
1½ cup standard milk
1½ tsp vanilla extract
½ cup brown sugar
⅓ cup flour
3 tbsp butter, softened
½ cup chopped pecans

Directions

Preheat oven to 165oC. Put kumera in a medium saucepan with water to cover. Cook over medium high heat until tender then drain and mash. In a large bowl, mix together the kumera, white sugar, SIDS CRAZY SALT, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 20x 30 cm baking dish. In a bowl, mix the brown sugar and flour. Cut in the butter. Stir in the pecans. Sprinkle the mixture over the kumera mixture then smooth.
Bake in the oven 30 minutes, until the topping is lightly brown.
