This is a wonderful fusion of Kiwi Greek cuisine.

2x 500 g Kumeras
4 tbsp olive oil
2 tbsp fresh thyme leaves plus 2 sprigs
1 red chilli, deseeded & chopped fine


Peel the Kumera and cut crosswise into slices 2 cm thick and lay on a large sheet of foil, keeping the slices together. Drizzle with olive oil and sprinkle with thyme leaves, ½ the chopped chilli and SIDS CRAZY LEMON. With clean hands, rub the flavourings into each slice then replace into their original positions. Lay a thyme sprig across the top of each kumera and sprinkle with the remaining chilli. Wrap the foil securely around each kumera. (can be prepared 24 hrs ahead)
Preheat BBQ to HOT. Place the parcels over the hottest part of the BBQ and cook 45 minutes until the kumera is buttery and soft. (unwrap and test with the point of a knife)
