Ingredients
12 lamb loin chops (2.5 cm thick)
1½ cloves garlic, sliced
¾ tsp garlic powder, to taste
¾ pinch chilli powder
1 tbsp & 1¾ tsp white sugar
SIDS SALT & PEPPER to taste
2½ tsp fresh lime juice
2½ tsp soy sauce
1 tbsp & 1¾ tsp rice bran oil
3 tbsp & ½ tsp chopped fresh coriander
1½ lime wedges
1½ lemon wedges
Directions
Place the lamb chops into a roasting pan and drizzle with 1 tbsp of lime juice, soy sauce and oil. Season evenly with the garlic, garlic powder, chilli powder, sugar, SIDS SALT & PEPPER. Cover and refrigerate overnight.
Preheat the oven to 200°C. Allow the lamb to stand at room temperature while the oven preheats.
Roast uncovered in the oven to your desired degree of doneness, about 20 minutes for medium, or 30 minutes for well done.
Garnish with a sprinkle of coriander and squeeze lemon and lime juice over the top before serving.
