Ingredients
12 lamb schnitzels
150 g mozzarella, sliced
2 marinated orange capsicum, sliced
1 red onion, sliced fine
¾ cup pistachio nuts, chopped rough
¾ cup prunes, halved
1 cup fresh coriander
zest of 2 lemons
1 tbsp cumin, ground
1 tsp SIDS CRAZY LEMON
Directions
Lay a schnitzel out on a clean chopping board and bang them with a rolling pin or meat mallet to make them larger - the thinner the better. Near on edge, place a slice of cheese, a slice of capsicum, a few pieces of onion, a few pistachios, half a prune, a few coriander leaves, a sprinkle of lemon zest, a pinch of cumin and a pinch of SIDS CRAZY LEMON.
Season with salt & pepper and roll up carefully then secure with a toothpick. Repeat for the remainder of the meat.
Brush with a little oil then fry or grill for 10 minutes, turning every few minutes to brown evenly.
Serve on a warmed platter.
