Ingredients

2 tsp sumac, ground
2 tsp smoked paprika
1 tsp cumin, ground
1 tsp sesame seeds
½ tsp fennel seeds, ground
¼ tsp chilli flakes
1 tbsp rice bran oil
500 g lamb rump
200 g hummus
2 tsp SIDS CRAZY LEMON
1 tbsp preserved lemon rind, sliced
1 tbsp fresh parsley, chopped

Directions

Heat oven to 200oC.
Mix together the sumac, smoked paprika, SIDS CRAZY LEMON, cumin, sesame seeds, fennel and chilli flakes. Rub spice mixture with canola oil into lamb.
Heat a large frying pan and brown the lamb on all sides then place lamb on a roasting dish and cook in oven for approximately 15 minutes.
Remove from oven and allow to rest for 10-15 minutes somewhere warm but not hot. Slice the lamb across the grain.
Spread hummus onto serving plates then place sliced lamb on top of hummus. Sprinkle with sliced preserved lemon rind and chopped parsley.
