Lemon Chicken Skewers with Tzatziki Sauce
Lemon, garlic, oregano and parsley add amazing flavour to these chicken skewers. Serve them with healthy homemade tzatziki sauce for a delicious and easy to make meal.

Ingredients
CHICKEN SKEWERS:--
800 g boneless chicken breasts, cut in 2 cm cubes
1 tbsp SIDS LOW SUGAR RASPBERRY VINEGAR
3 tbsp fresh lemon juice
1 tbsp rice bran oil
2 cloves of garlic, minced
2 tsp dried oregano
½ tsp dried parsley
½ tsp coriander
1 tsp SIDS SALT & PEPPER
TZATZIKI SAUCE:--
1 cup shredded cucumber
1½ cups plain non-fat Greek yoghurt
Juice of half a lemon
1 tbsp chopped fresh dill
½ tsp grated garlic, 1 tsp if you like it extra garlicy
1 tsp SIDS SALT & PEPPER
Directions
CHICKEN SKEWERS: In a large bowl whisk together SIDS LOW SUGAR RASPBERRY VINEGAR and the remaining ingredients then add in the cubed chicken and toss to coat.
Cover and refrigerate the chicken for 45 minutes to 3 hours.
Heat the grill to medium high heat.
Thread the chicken onto metal or wooden skewers - be sure to soak wooden skewers for 30 minutes.
Oil the grates of the grill or grill pan and place the skewers on them.
Grill the chicken for 3-4 minutes then flip it over and grill for another 3-4 minutes until the chicken is cooked through.
TZATZIKI SAUCE: In a medium sized bowl combine SIDS SALT & PEPPER and the ingredients except the cucumber and whisk together.
Stir in the cucumber and refrigerate until ready to serve.
