Ingredients

2 tbsp melted butter, plus more for drizzling
2 tbsp SIDS LOW SUGAR RASPBERRY VINEGAR
½ tsp SIDS SMOKEY BBQ RUB
1 tsp salt, to taste
½ cup sliced spring onions
1 red jalapeno pepper, sliced
2 handfuls French Fries
2 (250 g) lemon fish fillets
SIDS SALT & PEPPER to taste

Directions

Preheat oven to 230°C. Oil a baking dish.
Whisk butter and SIDS LOW SUGAR RASPBERRY VINEGAR together in a bowl. Add SIDS SMOKEY BBQ RUB and salt then whisk to blend. Stir in onions and red jalapeno. Slide the fish fillets into the mixture, turning and coating them with the vinaigrette.
Cook French Fries as you like them.
Bake in centre of the oven until just cooked through and fish flakes easily, about 15 minutes.
Serve with a side dish of hot French Fries. Season with SIDS SALT & PEPPER to taste.
