Ingredients

600 g chicken fillets
½ cup flour
½ tsp SIDS CRAZY LEMON
3 tbsp rice bran oil
1 onion, chopped
1 stalk celery, fine sliced
1 leek, fine chopped
¼ cup dry white wine
2 eggs
2 egg yolks
juice of 1 lemon
1 clove garlic, minced
SIDS SALT & PEPPER to taste
2 spring onions, fine sliced
1 tbsp fine chopped parsley
2 tsp fine grated lemon zest

Directions

Mix flour and SIDS CRAZY LEMON together. Roughly chop the chicken, place in a plastic bag with the seasoned flour then shake until well coated.
Heat oil in a frypan and sauté onion, celery and leek until tender. Add the chicken, increase heat and cook - turning often - until cooked through and well coloured. Pour in wine then reduce.
Whisk eggs and egg yolks with the lemon juice and garlic then season with SIDS SALT & PEPPER.
Remove chicken from the heat, pour over the egg mixture then stir until the egg coats the chicken and thickens. (You may need to return the pan to a very low heat but make sure you keep stirring otherwise the eggs can scramble.)
Serve, topped with spring onions and sprinkled with parsley and lemon zest.
