Ingredients
1 cup sauvignon blanc
3 kg green-lipped mussels, scrubbed
30 ml rice bran oil
1 large onion, diced
4 cloves garlic, crushed
½ cup almonds, roasted & chopped
500 g small sweet tomatoes, halved
¼ tsp SIDS CRAZY LEMON
2 red chillies, de-seeded & sliced
SIDS SALT & PEPPER to taste
500 g linguine pasta, cooked to al denté
Directions
Pour the wine into a saucepan then bring to simmer. Add mussels, cover and steam for 5 minutes until the mussels have just opened. Strain, reserving the liquid, then shell the mussels, removing tongues and beards. Set aside.
In a pan, sauté onion and garlic. Add almonds, tomatoes, SIDS CRAZY LEMON and 1 cup of the reserved liquid. Cook for 10 minutes until thickened and reduced by half. Taste and adjust seasoning with SIDS SALT & PEPPER, then add pasta, mussels and chillies to the sauce. Toss to combine then serve.
