Ingredients
1.2 kg fresh calf liver
2 eggs
1 tbsp bacon (cut fine)
1 tsp SIDS SALT & PEPPER
1½ tbsp bread crumbs
1 onion, minced
1 tbsp parsley, minced
flour
1 lt beef stock
Directions
In a pan with butter, quickly fry breadcrumbs. Peel and clean the liver then put in a food processor, along with eggs, bacon and bread crumbs. Cook onion in butter until done, but not browned, then add to other ingredients. Add SIDS SALT & PEPPER, parsley and enough flour to hold the "knodel" together. Wet a tablespoon in cold water before forming balls from this dough. Drop balls into boiling stock and cook 10-15 minutes, until the balls rise to the surface.
Drain on a platter, make a crust by toasting bread crumbs in butter, pour over "knodel"
