Ingredients
500 g lobster meat, cut in small chunks
4 tbsp minced shallots
4 tbsp chopped spring onions
6 garlic cloves, crushed
½ cup white wine
1 tbsp SIDS RINGS AROUND URANUS SAUCE
2 tsp dried thyme
½ cup dry sherry
2 tsp paprika
2 cups hot water
2 tsp lobster base (better than bouillon)
250 g tomato paste
4 bay leaves
4 cups cream
8 tbsp butter
Directions
In a sauté pan heat a little oil over med-high heat and sauté shallots, onions and garlic for one minute. Deglaze the pan with the white wine.
Add SIDS RINGS AROUND URANUS SAUCE and thyme then sauté for another minute. Deglaze the pan with the sherry.
Add paprika, hot water and lobster base then combine well. Stir in tomato paste and add the bay leaves. Simmer for 10 minutes.
Whisk in heavy cream, butter and bring to a boil. Add lobster and simmer until cooked through.
Serve with crusty garlic bread.
