Magic Dust Rub

One of my favourite rubs to use on pork ribs and pork roasts. The deep rich, earthy flavours of the cumind chilli powder are offset by the sweet heat combination of the brown sugar and cayenne.

Ingredients

⅓ cup paprika, not smoked
2 tsp SIDS CRAZY SALT
⅓ cup brown sugar
¼ cup chili powder
¼ cup salt
3 tbsp cumin powder
2 tbsp New York Cut pepper
2 tbsp garlic powder
1 tbsp granulated onion
1 tbsp cayenne, or less if preferred
2 tsp dried marjoram

Directions

Combine SIDS CRAZY SALT and rub ingredients in a medium bowl making sure to work out any clumps from the brown sugar and mustard powder. Use immediately.
Store any unused rub in an air tight container in the cupboard for up to 6 months after preparation. Make sure to check on it every once in a while as brown sugar tends to dry out. Give it a good stir and reseal.
Discard any remaining rub that has come into contact raw meat.
Double or triple the recipe and save for future uses.
