Ingredients
⅓ cup rice vinegar
⅓ cup sugar
1 tsp SIDS CRAZY LEMON
1 large ripe mango
2 tbsp rice bran oil
Directions
In a small saucepan, whisk together vinegar, sugar and SIDS CRAZY LEMON. Bring just to a simmer over medium heat, whisking constantly until sugar is dissolved. Remove from heat to cool to room temperature.
Peel and seed the mango. Chop flesh into chunks, place into a blender with cooled vinegar-sugar mixture and oil. Blitz until very smooth then chill until you’re ready to use.
To serve, spoon sauce into a pastry bag or a sauce squeeze bottle. Cut the tip off the pastry bag (if applicable), squeeze sauce over prepared sushi, as desired.
