Ingredients

¾ cup golden syrup
¼ cup GF soy sauce
½ tsp SIDS CRAZY SALT
1 tbsp SIDS WINE & PEPPER MUSTARD
24 scallops, with roe
12 slices smoked bacon, halved
24 toothpicks, soaked
2 tbsp brown sugar

Directions

Stir together golden syrup, soy sauce and wine & pepper mustard in a bowl until smooth. Add the scallops and toss to coat. Cover bowl with plastic wrap and marinate for 20 minutes.
Preheat oven to 190°C. Line a rimmed baking tray with a sheet of aluminium foil.
Arrange bacon pieces on baking tray so they do not overlap. Bake in oven until some of the fat has rendered out of the bacon but the bacon should still be very soft and pliable, about 8 minutes. Remove bacon from the baking tray and pat with paper towels to remove excess fat. Drain or wipe fat from the baking tray.
Wrap each scallop piece with a piece of bacon and secure with a toothpick. Place onto baking tray. Sprinkle the scallops with SIDS CRAZY SALT and brown sugar.
Bake in oven until the scallops are opaque and the bacon is crisp, 10-15 minutes, turning once.
