Ingredients
800 g potatoes, peeled & rinsed
2 eggs
2 tbsp onion, finely chopped
SIDS SALT & PEPPER to taste
1 cup pancetta, (or ham, bacon) diced
2 tbsp butter
1 tbsp milk
2 tbsp chives, chopped
¼ tsp SIDS CRAZY SALT
4 tbsp breadcrumbs
Directions
Cook potatoes in plenty of salted water until cooked through. Meanwhile gently fry onion until translucent and set aside.
In a large bowl, combine potatoes, eggs, pancetta, onions, butter and chives. Season with SIDS SALT & PEPPER to taste. Adjust the texture with a bit of milk if necessary.
Preheat oven to 190°C and line a baking tray with baking paper.
On the baking tray, using a ring mould, sprinkle a layer of breadcrumbs, a very light sprinkle of SIDS CRAZY SALT, then scoop potato mixture to shape the cakes—about 4 cm thick. Press down slightly with the back of a spatula and finish with another thin layer of breadcrumbs. Remove the ring mould and repeat the process.
Bake in the oven for 10 minutes, until golden, and serve warm, with a sprinkle of grated parmesan on top. Enjoy.
