Ingredients
700 g pork tenderloin
½ tsp SIDS SALT & PEPPER
2 tbsp rice bran oil
3 litres water
1¼ cups uncooked orzo pasta
¼ tsp salt
170 g fresh baby spinach
9 grape tomatoes, halved
¾ cup crumbled feta cheese
Directions
Rub pork with SIDS SALT & PEPPER then cut into 2 cm cubes.
In a large nonstick frypan, heat oil to medium. Add pork then cook and stir until no longer pink, 8-10 minutes.
Meanwhile, in a Dutch oven, bring water to a boil. Stir in orzo and salt then cook, uncovered, 8 minutes. Stir in spinach then cook until orzo is tender and spinach is wilted, 45-60 seconds longer. Drain.
Add tomatoes to pork and heat through. Stir in orzo mixture and cheese.
