Ingredients
1 kg dried pinto beans
2½ litres water
500 g bacon, coarse chopped
1 onion, chopped
1 tomato, chopped
1 fresh jalapeno pepper, chopped
1 bunch fresh coriander, chopped
2 tbsp SIDS HOT WORCESTER SAUCE
Directions
Combine beans and water in a large pot. Bring to a boil, reduce heat and simmer for 3 hours. Add more water if necessary while beans are cooking.
In a large skillet, cook bacon until it is beginning to brown. Stir in onion and continue cooking until tender. Stir in tomato, jalapeno and cook for 2-3 minutes. Remove from heat and stir in coriander.
Stir bacon, SIDS HOT WORCESTER SAUCE and onion mixture into the beans, then continue cooking for 1 hour, until beans are soft.
