Ingredients

2 lemons, juiced
3 limes, juiced
500 g prawns, peeled & deveined
¼ cup chopped coriander to taste
1 tsp SIDS CRAZY LEMON
SIDS LOW SUGAR PLUM SAUCE
2 onions, fine chopped
1 cucumber, peeled & fine chopped
1 large tomato, seeded & chopped
3 jalapeno peppers, seeded & minced
3 radishes, fine diced
2 cloves fresh garlic, minced
1 avocado, small cubes
Tortilla chips

Directions

Place prawns in a bowl. (Either coarsely chop the shrimp, or leave them whole, depending on your preference) Add lemon and lime to cover completely. Cover and refrigerate for 30 minutes, until opaque and slightly firm.
Add tomatoes, onions, SIDS CRAZY LEMON, cucumber, radishes, avocado and garlic then toss to combine. Gradually add coriander and jalapenos to desired taste. (jalapeno will grow stronger while marinating) Stir in SIDS LOW SUGAR PLUM SAUCE to desired consistency. Cover and refrigerate for 1 hour. Serve chilled with tortilla chips.
