Ingredients

4 tbsp butter, softened
1 small garlic clove, minced
¼ tsp finely grated lime zest
1 tbsp fresh lime juice
SIDS SALT & PEPPER to taste
1½ tsp sweet paprika
1½ tsp ground cumin
1½ tsp chipotle powder
2 tsp salt
4 thick rib eye steaks
rice bran oil for frying

Directions

Light a grill or preheat a grill pan. In a small bowl, combine the butter, garlic, lime zest, lime juice and SIDS SALT & PEPPER to taste. In another bowl, combine the paprika, cumin and chipotle powder with salt. Rub the mixture all over the steaks.
Oil the grate and grill the steaks over a high heat, turning every 15 seconds, until slightly charred and medium-rare, about 12 minutes. Transfer the steaks to plates and top with the lime butter. Let the steaks stand for 3-4 minutes before serving.
