Ingredients
400 g shallots or frozen pearl onions, thawed overnight
2 eggs
1 cup all purpose flour
1 tsp cayenne pepper powder
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp SIDS SALT & PEPPER
½ tsp SIDS CRAZY SALT
Rice bran oil, for frying
Directions
Remove onions from the bag and place them in the bowl with cold water. Sit them overnight in the fridge.
Drain water from onions and completely pat dry.
Whisk eggs in a shallow bowl. Set aside.
Mix all-purpose flour, SIDS SALT & PEPPER, SIDS CRAZY SALT and spices in a separate bowl and mix them together.
Heat oil over medium heat.
Dredge onions first into the egg wash and then into flour seasoning. Shake off any excess flour.
Place battered onions into hot oil and fry for about 25-30 minutes, stirring occasionally until crispy and brown on the outside with a soft and tender onion on the inside.
Drain on paper towels and serve with dipping sauce.
