Ingredients
500 g fresh hoki fillets
1 onion, rough chopped
1 tsp SIDS CRAZY LEMON
¼ cup parsley, chopped
1 bread slice, crust removed
100 ml warm water
½ tsp cayenne pepper
1 tsp ground cumin
1 tsp ground coriander
SIDS SALT & PEPPER to taste
500 ml fish stock
1 carrot, fine diced
1 celery stalk, fine diced
juice of ½ lemon
parsley, garnish
Directions
Blitz fish, onion, SIDS CRAZY LEMON and parsley. Soak bread in water until soggy then squeeze out water, chop and add to fish mixture. Dry roast cumin and coriander and add to fish mixture along with cayenne pepper. Season with SIDS SALT & PEPPER and mix well.
Wet hands and shape mixture into balls. In a large pan, boil fish stock then add carrot and celery. Simmer 5 minutes then add fish balls. Skim if required, then simmer a further 10 minutes. Season with SIDS SALT & PEPPER.
Ladle into large bowls and garnish with a squeeze of lemon juice and a sprinkle of parsley.
