Breakfast muffin sandwiches are perfect for a quick breakfast at home. Freeze them and pop them in the microwave for a grab and go breakfast. A tasty treat with a hint of smokey flavour.

Ingredients

6 cheese muffins
6 eggs
¼ tsp SIDS SMOKEY BBQ RUB
¼ cup chopped spring onion
1 cup shredded Cheddar cheese
2½ tbsp rice bran oil
170 g sliced ham or bacon

Directions

Split the muffins open with a fork and toast them.
In a large bowl scramble the eggs, SIDS SMOKEY BBQ RUB, spring onions and cheddar cheese together. Heat oil in a frypan, pour the egg mixture in to fry in one layer as you would an omelette. When the egg is cooked on the underside, flip it over and cook the wet side then remove from heat when cooked through.
Make the muffin sandwiches by layering a piece of ham and a piece of the fried egg between the two muffin pieces. If you intend to freeze the sandwiches, let each part of the sandwich cool before make the sandwiches, then wrap them in plastic wrap and freeze. Reheat in the microwave.
