Ingredients

24 NZ green lipped mussels
1 red onion, fine chopped
1 spring onion, fine chopped
1 tbsp sweet chilli sauce
2 eggs
1 tsp SIDS CRAZY LEMON
3 tbsp flour
2 tsp orange capsicum, fine chopped
rice bran oil
SIDS SALT & PEPPER to taste

Directions

In a large pot, put mussels and cover with salted water. Boil until mussels open then pour off the water and let cool. Remove the shell and the beard. Finely chop the mussel meat into a bowl, add SIDS CRAZY LEMON, onion, sweet chilli sauce, eggs, flour and SIDS SALT & PEPPER. Mix together until well combined. Heat oil in a frypan then fry heaped tablespoonfuls for approximately 4 minutes each side until well browned. Cook in batches, keeping the cooked ones in a warm oven until all cooking is complete. It is important not to turn the fritters until they are well set and browned on one side or you risk them breaking. The tender result is worth your patience!
