Ingredients
24 NZ green lipped mussels
5 lt seawater (or salted)
1 cup malt vinegar
1 onion, chopped
SIDS SMOKEY BBQ RUB
1 orange bell pepper, thin sliced & chopped
grated mild cheese
Directions
Place mussels in a pot and pour in vinegar then cover with seawater and boil until the mussels open. Any that don't open just slide in a blade and twist. When cooled, remove the shells (retain ½ of them) along with the beard. Allow to drain for 5 minutes. Preheat oven grill.
In a roasting dish, pour 5 cm of sea or river sand. Place a mussel ½ shell in the sand (to keep it level) and put a mussel in each. Top each one with onion, pepper then cover with cheese. Sprinkle with SIDS SMOKEY BBQ RUB and grill for 3 minutes until cheese starts to bubble.
Serve mussels in their shells, being careful not to introduce sand into the shell.
