Ingredients
24 NZ Green Lipped Mussels
¼ cup water
¼ cup white wine (house cooking)
¼ cup pickled peppercorns
Crème fraîche
fresh dill, chopped fine
Parmesan cheese, grated
breadcrumbs
1 loaf ciabatta bread, sliced
1 clove garlic, bruised
SIDS CRAZY LEMON
EV olive oil
Directions
Preheat oven grill to 250oC.
Steam mussels in a large lidded pot with water and wine, until they open, about 4 minutes. Remove each mussel from the shell, discarding the foot and beard. Place mussel back into the shell. Add 4 peppercorns to each and top with 1 tsp crème fraîche then sprinkle with dill, parmesan and breadcrumbs.
Cook under the grill for 3 minutes.
Run ciabatta slices with garlic, brush with olive oil then sprinkle with SIDS CRAZY LEMON. Place under the grill until lightly browned.
Serve mussels with grilled ciabatta alongside.
