Ingredients

18 fresh NZ green lipped mussels
½ pottle firm cream cheese
1 clove garlic, minced
2 tbsp sweet chilli sauce
1 spring onion, minced
Dash of paprika
Dash of lemon juice
2 tbsp fresh coriander, chopped
2 eggs, lightly beaten
1½ cups breadcrumbs
1 tsp SIDS CRAZY LEMON

Directions

Steam mussels until open, cool and shell. (retain 1 shell each for serving) Combine cream cheese, garlic, chilli sauce, spring onion, paprika, lemon juice and coriander then chill for 20 minutes. Remove the adductor muscle, beard etc. Stuff the mix into the mussels, about 1 tsp fits well. Do not over-stuff as it spills out during cooking.
Combine SIDS CRAZY LEMON with the breadcrumbs then dip the mussels in the egg then roll in the breadcrumbs. Chill for 20 minutes then fry or BBQ until golden brown on both sides.
Place each mussel in a half-shell and serve.
