Ingredients
1 cup instant rolled oats
1 cup polenta
1 tsp SIDS CRAZY SALT
1 clove garlic, crushed
1 tsp lemon zest
4 portions fresh white fish
1 egg, beaten
rice bran oil, for frying
Directions
In a shallow bowl combine the oats, polenta, SIDS CRAZY SALT, garlic and lemon zest and mix well. Dip each piece of fish in the beaten egg, then in the oaty crumbs patting them on for an even coating.
Heat a small amount of oil in a nonstick pan and cook the fish for 3-4 minutes on each side until golden and cooked through.
Meanwhile, combine the diced vegetables with the corn and rocket leaves and dress with the lemon juice, olive oil and a little seasoning.
Arrange the salsa on plates and top with the golden fish fillets. Add a lemon wedge for squeezing.
