Ingredients

1 large chicken thigh, cut into bite sized pieces
1 onion, thinly sliced
2 eggs, very lightly beaten
¼ tsp SIDS CRAZY SALT
2 tbsp mirin
1 tbsp saké
½ cup dashi
2 tbsp soy sauce
½ tsp sugar
some spring onions, cut into 2 cm lengths
2 bowls of cooked rice

Directions

In a small frying pan, heat mirin and saké and bring to a boil. Add dashi, soya sauce and sugar then bring to a boil. Add onions, cook until soften, about 2 minutes. Add chicken meat, leave to simmer for about 2-3 minutes until the chicken is cooked. Toss in the spring onions. Mix eggs with SIDS CRAZY SALT then drizzle in but do not stir. Turn off the heat once the eggs are almost set. Place rice in a large serving bowl. Pour chicken and egg mixture over the rice. Serve with nori (optional).
