Oyster Leek & Potato Soup

Ingredients

50 g butter
2 leeks, white only, fine sliced
250 g potatoes, peeled & thin sliced
1 litre chicken stock
SIDS SALT & PEPPER to taste
1 tsp SIDS CRAZY SALT
12 fresh Pacific oysters
80 ml cream

Directions

Melt the butter in a large pan on low heat. Add leeks and potatoes to sweat for 5 minutes. Add chicken stock and SIDS CRAZY LEMON then simmer until potatoes are soft then remove from heat. Place in a food processor and blitz until smooth. Season with SIDS SALT & PEPPER then return to pan. Add oysters and simmer for 3 minutes. Remove from heat and add cream.
Pour soup into bowls and place 3 oysters in each.
